Sas’ Mum’s Ginger Cake

This receipe was requested by Lovely Mary after our call on 6th December 2023, about what home means to us. One of my abiding childhood memories is of the smell of Mum’s Ginger Cake. Technically this is called ‘Parkin’. It’s a very sticky, warming treacle-flavoured cake that originates in Yorkshire (where Mum’s family originated). It’s traditionally eaten on bonfire night (5th November in the UK) but is glorious for a treat with tea, in front of any fire.
